Crisp, buttery, compulsively irresistible bacon and milk chocolate combination has long been a favorite of mine. I started playing with this combination at the tender age of six while eating chocolate chip pancakes drenched in maple syrup. Beside my chocolate-laden cakes laid three strips of fried bacon, just barely touching a sweet pool of maple syrup. Just a bite of the bacon was too salty and yearned for the sweet kiss of chocolate syrup. In retrospect, perhaps this was a turning point, for on that plate something magical happened: the beginnings of a combination so ethereal and delicious that it would haunt my thoughts until I found the medium to express it–chocolate.

  2. Heck, I have no idea what they allow into the country these days.

    Apparently if you’re shipping it from China, you can poison us with lead and melamine.

    From Belgium, I dunno. The only thing I ever had shipped here that I wasn’t “supposed” to be able to get was absinthe. Good stuff, don’t know why they don’t sell it here. Our government simply hates for people to actually enjoy themselves, I think.

    Humm, I knew about chocolate but not about pork. I thought the nitrates in the bacon would be the reason not to feed it to dogs. I never feed it to my dogs because it contains it and so much salt.

  4. Pork affects dog livers and can be toxic, especially to small dogs. Yeah, I find out all kinds of stuff from my vet. They aren’t supposed to eat grapes either, but my dogs snack on our grapevines and it hasn’t hurt them yet. They are largish dogs, though.

    There’s another cool chocolate place here in San Diego called Chuao Chocolatier – they have awesome chocolate, too. Not as exotic, but they’re doing a lot of beer and wine pairings with chocolate that are very nice.
